A one-dish meal. Ground beef, garlic, salsa, corn and spices are baked and topped off with a crown of corn bread. So good and delicious the kids (big & small!) will be back for seconds!
Cooking Instructions
Thaw completely in refrigerator. Preheat oven to 400 degrees. Spray 9x9 or other casserole dish with PAM. Place contents of bag in pan, smoothing top. Bake casserole, covered with foil, for 45 minutes. Meanwhile, prepare corn muffin mix according to package directions. After removing casserole from oven, remove foil. Carefully spread corn muffin batter over the top, being sure to cover completely the best you can. Return casserole to oven and continue baking, uncovered, for another 15-20 minutes or until golden brown and a wooden pick inserted into center comes out clean. Serve with sour cream, salsa and a tossed salad.
